After I take a picture and check the preview screen and the picture shows up with good skin tones but when I print it it's on the dark side so I usually have to use "curves" in PhotoShop CS to lighten it. Any ideas?

Why dont you do this. Tell us how you have your settings on the 300D, then how you Post Process, might be better if we had more info.

The LCD's on the 10D and 300D show pictures much brighter then they actually are. Don't use it to judge exposure. Set your display to show the "info", which will display the histogram with the picture. Use the histogram to judge exposure not the image.
Read this to learn how to use the histogram to judge exposure:

How do I get it to automatically display the histogram in the preview after taking a shot on the 300d? Or do I have to press info each time?
cheers

How do you know that the LCD screen is showing the image too bright?
Couldn't it be that the printer is printing the image too dark?
Without a completely calibrated system, it's all a crapshoot.

They are dark on the computer and on the printer (two different printers to boot.) I will work on learning how to use to Histogram as one person reccomended. Thanks for the replys.

The issue of bright LCD's and not so bright pictures is well documented. Do a search above and you'll see. Sometimes Robert, your much the curmudgeon.

The preview on the lcd screen of the Rebel are brighter than the exposure actually is. However, when I use the 50mm f1.8, I can judge my exposure looking at the preview. So far, using the kit or my 35-105 f3.5-4.5 lenses I must over expose to get a proper exposure.

It's not specifically 300D issue. Most of the small LDCs I've seen brighten up the image significantly.
