is anyone a stargazer with their EOS? whats the best for the subject and the best adaptor, as i do see a variety of different adaptors

The 'best' depends a lot on how much you want to spend and what you want to look at. As far as photography is concerned, you're also going to need to pay very close attention to the mount which is used to track objects in the sky as the Earth rotates. These mounts can be quit costly since they need to be very precisely engineered and very, very stable. The typical type of mount used in astrophotography is called a German Equatorial Mount - GEM - which can be motorized and even computer controlled.
There are also some more inexpensive ways of doing astrophotography such as with a home built "barndoor mount" and a wide angle lens. You can actually do some very nice photography with such a simple setup capturing the Milky Way and a number of nebula.
I would highly recommend heading over to the CloudyNights forums and seeing what they recommend for someone with your budget and goals.
