Epson R260 - COlor Profile from CS3

Can anyone point me in the direction of learning and understanding how to print photos I took with my Canon 30D using Photoshop CS3 using my new Epson R260? I am a designer so I am familliar with what a color profile is, but there are way too many factors when printing. What should manage color PShop or Epson? Should I be using RGB or CMYk? I just want to make nice looking prints. Also what should I do for B+W?
