What is it that changes on a DSLR, that we have to multiply the focal length of a lens by 1.6 ?

The size of the sensor in most DSLR cameras is smaller than the size of a film negative.

Experts correct me but this is my understanding. Take a picture with a film EOS 1V. Now take that same exact picture, same lens with a 10D. Compare them side by side. The 10D will look like you have cropped the photo. This is because the sensor is smaller than a 35mm negative.

Yup. When you say exact same picture, that would mean same lens and same position of camera.
