Having lived in MN and visited the Northshore A LOT I can tell you that you definitely want to take the Canal Park exit to in Duluth to start your adventures.
In Duluth there is an iron ore tanker you can tour plus a Lake Superior Maritime Musuem. You can walk out on the jetty and do not forget lunch at Grandma's (and do not forget to check out the bar upstairs, either).
Also, with all the shops along the waterfront there, be sure to check out the Duluth Pack Store (they are expensive but the stuff lasts forever) and the coffee shop right across the hall (if its still there).
After that, head on up the Northshore drive to Two Harbors, Gooseberry Falls an the Split Rock Lighthouse for an awesome time!
I was planning on making a vacation trip up that way this fall but things happened as they do so, maybe next year.
Oh yeah, pack a coat - it gets awfully cold up there. More so with the winds coming off the water.
Remember what Mark Twain said: "The coldest winter I ever spent was a summer in Duluth."
Forgot to add: Do not forget the Skyline Parkway for some small waterfall opportunities as well as overlooks over the city.

7 bridges road will offer ample opportunities of smaller waterfall shots. The lift bridge at night is a good subject.

The Gunflint trail out of Grand Marias is quite nice.Naniboujou Lodge is a nice sight of course. All the state parks on the way up the shore they all have nice waterfalls only 5 dollars a day for all the parks cant beat that. Two Harbors is also very nice look up on here:http://www.boatnerd.com/ to see where the Taconite boats are. Lots to see just get in the car and go.
