I am going to develop my own pictures on Epson 2200 and will be selling them size 11X14. Is it better to use gloss, semi, or matt? What do most photog. use?

I think it comes down to personal likes. Each format produces very different look to the final picture.
I think only the glossy comes close to looking like a film photo print, but I also have friends who beleive that the matte produces to best looking prints. I prefer the semi-gloss for most of my prints.

I find that subject matter and lighting paly an important part in the decision.

Brightly colored wildlife.. I like to use gloss.. for every little detail and sharp contrasty colors.

A lot of more moody portraits I like matte... even the occasional landscape..

Semi gloss again for certain portraits and scenics...

For black and white prints I like matt, to me they make the blacks look richer.

After upgrading to the 2200, we printed only on matte ... felt it gave better ink saturation to the prints .... a lot of people who want our prints, unfortunately, want them on gloss or semi-gloss, so we accomodate their tastes as well. But for me, the best is matte. You might want to lay in a supply of all papers. One person will like the matte print, the next wants the same pic glossy ....
cheers,
