I just wanted to recommend a Very detailed and enlightening "how too" book for Adobe CS3.

"The Adobe Photoshop CS3 book for digital photographers"
by: Scott Kelby

This thing is 473 pages of nothing but step by step how too's in full color and Really explains in detail what, why and how!!! I give it a 10, especially if your like me and know very little about the program.
Who knew converting to a black n white photo had so many steps and tritones and quadtones and this and that......:lol: Amazing what you can do!!

Yeah most people just hit greyscale or de-saturate and are done with it. You can get much better results than that.

I will second Kelby - he's quite an excellent author and very readable. His were some of my first books when I migrated to digital.

If you're into B/W conversions, there's an excellent plug-in I bought from FredMiranda called B/W Conversion Pro, I beleive. It automates a lot of the "behind the scenes" actions and gives you the ability to use the old style B/W film filters. You can see some B/W examples I did using his tool in one of my galleries:
