Altering exif data in-camera?

I see alot of detailed exif data with like ©opyright info, owner, mothers maiden name, middle school detention records and so on. Is this data put in by an app like LR. or AP. in post processing? Or can you get in the your camera and fill some of this out or even shut stuff on or off?

I use LR to add ©YYYY CDI Fotografi on import. You can add/delete other stuff but I don't bother.

Some info such as owner can be done w/ camera tether and running Canon SW.
