I'd poke around in the Delaware water gap recreation area. I worked at Peters Valley craft center for 14 weeks this summer and it was beautiful!

Yeah, I'm in Central jersey. So, I'd say the Diners. A diner picture is always better if you say you took it in Jersey lol.
And the parks are nice for plants.

Be humorous while going places in Jersey. NATURAL state of Pine Barrens (Oswego), representative of the state's juxtaposition of natural and man made landscapes:

NJ is great for man made landscapes: http://aesop.rutgers.edu/~rabin/Industry/slides/BorgataCasino_1.htm
Others
Sunsets over lower DE bay, since the Ocean at Jersey Shore faces east.
Jersey shore dunes.
Farming scenes like harvesting cranberries in fall: http://aesop.rutgers.edu/~rabin/NJ_Ag_Expt_Station/Cranberry_Hvst_Marucci/slides/Cranberry_Harvesting_79.htm
Small fascinating places like Ringing Rocks across DE River in Bucks Co, PA.
There is no limit anywhere on planet of what to photograph.

Wait - let me guess - you've never been to New Jersey... or at least never outside Newark? Trust me, there is a reason it's known as the garden state. ;)

washingtons crossing park, you can take a picture of the bridge in trenton. at night it glows with " tenton makes the world takes", howell farm ( its a historical farm quite a time warp when you are there), and all through hopewell county is very pretty.

There's a pulloff of the Palisades Pkwy heading north (just past the GWB) where there's a great view of the Manhattan skyline (at least the northern part of it). Don't know about other viewpoints, but I'm interested to hear as well -- I may be driving through there soon.

High Point State Park in northern NJ. Or at a lake off 513 called Green Pond. There are several reservoirs in northern NJ that are beautiful, too. If you don't like all the people or smog take a ride along the Water Gap; it's beautiful any time of the year.

We used to drive by the sign for Ringwood every time we made the trip from Mass to NJ and I always thought of ring worms. I'm sure they get that a lot.

Try these
Worthington State Park (off Rt 80 @ PA line)
Anywhere along I-78 west of I-287
Fishing marinas in & around Belmar & Atlantic Highlands
Google NJ Waterfalls, there were a lot more of them than I thought
Same with Lighthouses
Want sports? Somerset Patriots, Lakewood Blueclaws, Newark Bears & Trenton Thunder. You can't beat the price for a decent game.
Believe it or not, downtown Newark. PAC Center, Prudental Center, been a big change from what it used to be. Just don't wander too far from downtown.
New Jersey has a lot to offer, and in all parts of the state, (so you don't have to spend $$$ on travel) you just have to look around.
Happy shooting!!

Actually we have had a pretty warm winter. I was near Worthington today, ground was snow covered but it wasn't that cold. Wished I had my cameras with me.

Born and raised there myself...you can also add the Watchung mountains to the list of places to go (especially for fall colors). There are great views of the Manhattan skyline from the Jersey City/Hoboken side (especially towards dusk when the setting sun puts a golden glow on the glass). Ignore the naysayers...they've probably never been to NJ.
Not to mention wildlife and migratory bird sanctuaries down along the southern cost near Barnegat Bay and Long Beach Island. If you're into night shots of amusement piers, there's also Seaside Heights and Wildwood. Since its also one of the original thirteen colonies, many areas date back to pre-Revolutionary War...plenty of buildings and restored areas (cemeteries too) that go back to the mid-1700's. One advantage that NJ has is its small size...you can cover a whole lot of territory in a short amount of time. Can't say that about Texas (where I live now)...one can drive for twelve hours and STILL be in Texas. Have fun.

4. Right now – week of July 16th, 2011 – New Jersey’s sunflowers are in bloom and its Farmers Markets are busy on the weekends – Got two articles with info on that –
Perfect jaunt – perfect time to see sunflowers burst into bloom at http://www.examiner.com/technology-education-in-newark/perfect-jaunt-perfect-time-to-see-symbols-of-long-life-burst-into-bloom#ixzz1SGS3w7VS

GLOBAL THOUGHTS -- If you’re into global travel, check out my Astounding Nature articles – it’ll cover the capelin roll in Newfoundland, the puffins at Latrabjarg Cliffs in Iceland, and northern gannets in Newfoundland at Cape St Mary’s Reserve – it’s the slideshows that will help you see the type of photo opportunity. By the way, I do love nature, but I’m not a hiker (back problems with the photographic gear issues, happily shooting with Canon7D mounted on Manfrotto tripod), so my recommendations would be on the “easy access” list!
Hope that helps!
