The 300D decides when to use One Shot or Servo. I believe The Hack gives you Servo on demand.

The hack allows selection of One-shot, which is very useful.
The other setting is the normal 300D mode where the camera decides.

The only way to force AI-servo which means the camera will try to keep the focus on a moving object while shooting is to use Sports Mode with a 300D.
In other modes, the 300D uses a mode where if movement is detected it may try to keep focus. That caused an issue for people who like to focus then recompose, so someone came up with firmware that allows selecting one-shot mode.

AI Servo is when the camera keeps track of a moving object in the frame and keeps is in focus.
One shot AI focus is when you focus on something and it stays like that until you take the shot.
YOu cannot select focus modes on the rebel, unless you have the HACK, and even with that it doesn't work flawlessly.
