I just put the circular polarising filter on top of my UV filter - on a 17-55 EFS IS lens - and ended up with dark corners to all the photos - I'm unsure if this from the lens hood or not- or a consequence of using 2 filters.

It is called vignetting. It is likely from the stacking of the two filters. I would remove the uv when using the cpl. I wouldn't worry about uv filtering.

Agree with Jim on that one. Using a UV filter all the time is a highly debated topic, because you don't really need them unless something poses a "clear and present danger" to your front element. Usually a lens hood does the job of protecting your lens. But you definitely don't want to stack something else on top of the UV. Not only will you get vignetting, but your image quality will suffer, especially if you're using cheap filters.

Yes best not to double stack filters.
Check the Protective Filter FAQ link for pros and cons of UV filters etc.
