I'd look VERY closley at the Canon EF100-400mm f4.5-5.6L IS USM
I'd bet it would solve 95% of your wildest lens desires.

Please don't shout :) (use of all caps is "harsh" on the eyes...
The 300mm f/2.8 is the best sports lens around! A fabulous lens witlh amazing image quality and the fastest AF available when combined with the right camera.
It may be a better lens for osme of your intended application. But for the fishing part.. I would be concerned about working distances? You may need the flexibility of a zoom at times when the 300mm focal lenght is just too long. This is why the 100-400mm came to mind. But your needs may not be what I understood them to be.
Will you be in a boat for the action fish pictures? (I assumed this meant sportfishing?)
Anyway.. how you use it is something that you will know better than any of us.

In a boat.. you may end up being very close to the subject matter at times.
So a Zoom may be a requirement.. and or multiple cameras with different lenses. For sportfisjhing I'd think a good zoom with IS.. and a wide lens (preferably on a second camera so you have acces to both at all times) would be just about perfect.
