Yes, you can sync up to that fast IF you are using an on camera flash that has a HSS mode (Example: 580EX, and 430EX). If you are using studio strobes, then your highest sync speed is 1/250th.
In order to enable HSS on an on-camera flash, it is done though the flashes menu. Look to your manual to see how this is done.
