I understand when to set my lens to 2.8, and when I want a little more DOF use 3.5 or 4, but how do I know to choose between 7 8 or 9? Right now the only thing that would sway me from one to the other is shutter speed, though don't remember the last time it would have really made a differance. From a DOF standpoint, I don't understand how to evaluate my choice.

Hehe, exactly! :D
In his well know book Understanding Exposure, Bryan Peterson refers to aperture values between f/8 and f/11 as Who Cares apertures..
There is no big difference between them and they are mostly used when DoF is not really important..
