What DPI should be used when scanning 35mm negatives to your computer.

I use a Coolscan IV and I scan at it's maximum non interpolated resolution 2900dpi. The Coolscan V is 4000dpi.

I have an epson scanner. It will scan 50 -12800 DPI. It also gives me options of 48bit color- 24bit color-or collor smoothing. Which color mode should I use? Which DPI should I use?

It is unlikely that 12800 DPI is without interpolation.
When I scan film with my Canon, I use the highest non-interpolated resolution, which also happens to be the highest resolution, and in a 42-bit color depth, which fits into a 48-bit file.
Once I have edited the scan for color balance, equalization, and all that good stuff (and I have the perfect image), then I convert it to 24-bit color TIF final image, and that gets archived.
Further, I convert that to JPEG at a reduced resolution if it is going on the web.
