I'm looking to pick up a pair of vivitar 2800 to be used as off camera flash in M mode. Would it work with my 550ex and 580ex with optical slaves?

Yes, but I think the Vivitar 2800 only has one power level, full, in manual mode.

Having only full manual power does not mean that you will not be able to use the 2800.

It will be a useable, but not optimal, flash for off camera manual work.
