I'm new to this digital malarkey and wondered if there was any advice on storing photos in a way that is sensible, intuitive and easy to master?

Hi Damien - I've posted a sypnopsis of the workflow that I use to store photos - you'll see it in thread: http://photography-on-the.net/forum/showthread.php?t=4096#20037
In a nutshell what I do is to cut groups of photos (logically organized by topic - summer vacation 2002, spring flowers, Christmas 2001, etc.) to CD (2 CDs, one stored locally, one stored offsite). I then make digital thumbnail contact sheets of the photos on the CD and store these on my computer. When I want to retrieve a photo, I browse my digital contact sheets, find the photo I want and load in the CD.
There is software that can create databases - but these require more work than I'm willing to put in.
I've also got an on-line version of my workflow (although this version is more geared toward long term archiving your photos - I don't generally do the caption part with my day to day photos (although I probably should). You can see this workflow at:

Have fun!
