Why would you use 'Erase all' when 'Format' is so much quicker?
Am i missing something here?

I format all the time - never use an "erase" option.

so that you can erase all the files that are not protected, not like format, it will erase everything even the protected ones.

I think that when you do an erase all it dosen't delete folders that you created where a format will.

Perhaps a translation for our American cousins? I believe "rubber" has a somewhat different meaning over the Western side of the pond... ;)

Anyway, I usually format. It's much quicker. I've actually never used the protect function. I don't see much use for it.

I guess it’s like the case in your PC hard disk!
When you “erase” data from a hard disk it is always easy to recover it by “undelete”. Unless you overwrite it with another set of data, the photo that was erased by mistake is actually still there waiting to be recovered.
But in format there is no go back, no easy "unformat" method.
Format means you are going to loose your data –arguably!- forever.

Incorrect. If you format a lexar card, you can still recover images with their image recovery software.

Only as long as you have not taken any more photos over the formatted card. At that point, the lexar software fails. I, unfortunatly, had to test this last night. Lost 6 hours worth of work. BAH!
Still, format, it is like giving the card a bath, cleaning all the data.
