...I think that's the right terminology?
ie: what's the best way to get a square grid pattern to still appear as a square grid pattern when you take a picture?

Mount camera on tripod, and use a bubble level or two to make sure it's square to the grid pattern. Not a little too far to the left or right, not tilted slightly.
Use a longer lens at a greater distance, and not a wide angle lens close up.
In general, you'll be better off with a prime, than with a zoom lens.
Before viewing the grid pattern on your computer monitor, make sure your monitor won't distort the image.

It's tough, especially the closer it is and the shorter the focal length of the lens. It's pretty easy to correct barrell or pincushion distortion in software, though.
