I really want to do a better job converting my colored images to Black and white...is there a better way than using gray-scale to convert? I have CS3, Lightroom and adobe camera raw.

You need to be able to control which colours become black, which become white and which become grayscale. Have a look at this -> converting color to black and white (http://chrislongley.com/blacknwhite_conversion/black_and_white_with_photoshop.html)
Also specifically for RAW files try this black and white image conversion with RAW files (http://chrislongley.com/blacknwhite_conversion/digital_photo_professional_raw_black_and_white.htm )

Try using Photoshops channel mixer. It has a monochrome option which will allow you to do as davidbell has suggested.

I think in CS3 the channel mixer has been superseded by this black n white tool (http://www.chrislongley.com/blacknwhite_conversion/photoshop_black_and_white_tool.htm)
If you're converting RAW files then try monochrome picture style (http://www.chrislongley.com/blacknwhite_conversion/digital_photo_professional_raw_black_and_white.htm ) with a filter selected. I've had excellent results from that, nice rich deep blacks. If you're shooting Canon then you probably got DPP when you got the camera.
