What is the lighting like at the venues you are going to be shooting at?
Impossible to give good advice without more information really.
It's likely you will be shooting wide open at a high ASA - also you may need to consider the use of flash.
Are you able to rig flash heads at the venue?

The basic recipe derives from the need to stop action and capture authentic color:
-Fast camera focusing, tracking, and frames/sec (the 10D is a handicap on this one)
-Fast lens (you have a fairly fast one - f/2.8 )
-High ISO (800/1600)
-Fast shutter speeds (1/320 and faster for your lens)
-AI Servo focus mode (usually - but not always)
-Selective use of burst shooting
-RAW workflow, custom white balance, or other in camera setting to deal with lighting which is typically mixed or closer to tungsten (3400) than daylight (5500).
Flash usually requires custom setups exceeding your current equipment.
There are older "zone focusing" techniques that have largely been supplanted because of today's 's rapid focusing cameras and lenses.
If you don't have a true sportshooters camera (1D, 1D Mark II) - you're going to have a lot of out of focus shots - even after you've perfected your technique. Most OOF shots are a combinatin of poor technique and equipment not suitable for the task at hand.
Wrestling may be a bigger challenge than you think. I once followed a discussion thread in which there was considerable agreement that Volleyball was the most difficult sport to shoot. Volleyball

LOL. Right you are. That's why 10D sales outpace 1D MKII sales by a mile. When I get my 1D, it will be my BACKUP. 8)

TRUUCHA.
I am also a videographer and have spent a lot of time doing gymnastics video. Most of the photographers that I have met that are using the 10D are using the same lens as you. 70-200 2.8

BACK TO THE SUBJECT..
oops.
back on the subject..
The 70-200 f2.8 wil greatly help indoor sports shooting with any of the bodies it is attached to. A 10D will work for these sports, a 20D will be a little better, and a MKII will be a tad bit better than that.
The key is the low light capability of the lens. F2.8 or better is a must have item for this shooting.
The other key...high shutyter speeds. As fast as you can get them.
The 10D has decent high ISO quality, the 20D is far better at 1600 and the MKII comes in above the 20D by a few clicks..
Shooting RAW, although an option, is not really necessary unless your lighting is extremely poor, and you don't have your jpeg settings and camera dialed in to only shoot jpeg.
I rarely shoot sports in RAW, unless it is something really important and I want the most I can get.
In short, shoot wide open, keep the shutter speeds up and adjust the ISO to achieve them...
Flash? Well, if it is an option for you, do it, but get the flash off the camera and off axis, so the shots don't look harsh.

I can be done.
I have a D30 which is known probably for one thing.
Its focus speed is so slow you could go the moon and back before it locks.
ISO 1600 is also darn near unusable.
But I make it work. I have a 70-200 2.8 and I use the AV mode and set the shutter at 200. I use a monopod and I shoot TONS of pics because probably 75% of them are out of focus.
The gym where I shoot is really bad for lighting...worse than most, and they dont like flashes. But at 1600 and 1/200th with the 2.8 and a little Neat Image work for grain...I get pretty decent shots that work for the school newspaper and even yearbook (sometimes as large as 5x7 prints in the year book)
so although you could sit dreaming as you drool over the picture of the D1s Mark II in the latest version of Popular Photography...
You sure as heck dont need no thirteen bazillion dollar camera to get good shots. :D
Your 10D is miles better than my D30...and If I can make it work...so can you. And your lens is good...you spend hard money for that lens and your camera and they will serve you well.
Dont let anyone tell you you need to buy $$$$$ worth of camera stuff just to get good pictures. Good pictures are take by photographers...not by $$$.
If you have a Mark II then by all means use it and sell me your 10D...but if you dont have one...dont cry...go take some pictures! 8)
