1st. How do you get the photo in b&W and make only 1 thing color?

2nd. How do you get your name in the photo? I've tried just adding text into it but it doesn't come out right?

Well I tried to follow the guide but it didn't work out. I'm new to photoshop so maybe thats why I'm not getting it.
