Flash Exposure Compensation
I don't have a 5D, or the 580EX II for that matter... but on my 580EX if your shooting in ETTL mode then you should just be able to press the center button on the flash and twist the dial clockwise or counterclockwise and it'll go down or up in 1/3 stop incriments.
It'll basicaly change the flash to output more or less light depending on what you have it set to. I always seem to have problems when I try messing with it so I just use the flash in it's M mode and it makes more sense to me  might try that if the whole FEC thing doesn't work for you :) I may just be slow though

On the 5D, select the adjustment mode with the right hand button on the top of the camera. It's the one that allows you to adjust the type of metering being used for ambient light and the one that allows you to adjust the flash exposure compensation. Once you have depressed that button, you can adjust FEC with the wheel on the back of the camera. The adjustment amount will show in the exposure bar graph in the LCD display on the top of the camera or in the viewfinder. Push the button again or depress the shutter button and you are done. My opinion is that it is much easier to set and adjust it on the camera than it is on the flash.
