While I believe there may be a tiny handful of digital cameras with a built-in multiple exposure capability, the overwhelming majority of digital cameras rely upon post-processing (ie. Photoshop, Paintshop Pro, Adobe Elements, etc.) for multiple exposures.
This approach is only slightly more involved than would be an in-camera option, and it lends itself to far greater control over the final image. For various reasons, this difference between traditional film-based photography and digital image capture actually makes a fair amount of sense (although - if only from a marketing standpoint - it might well make some sense for camera manufacturers to offer the in-camera option, at least on some models).
Oh, I suppose I should address your question directly - Yes, it is possible, and rather simple, to gain effect simialr to double exposure with a G5 or any other digital camera. The precise steps vary somewhat depending on the software employed, but typically involve an elementary application of the software's "layers" feature. Detailed instructions can doubtless be Googled without much trouble.
