After changing the background color using the paintbucket tool in PS, I'm often left with the edge of the subject matter looking irregular. How can this be avoided?

Well if you selected a object then inversed the selection so you could paint the back ground go back and reinverse you selection on the object and feather it so its edges are smoother....

The images I do this on typically have fairly uniform backgrounds so I don't select the subject. I just use the paintbucket to click on the background a few times. Any other ways to do it?

Here is a link that may be of some help. There are many ways to make selections, I prefer the Magnetic Lasso tool.
