I love the turtle shot! HOW did you get him to stay still long enough?? The only complaint there is that it might be cropped a bit too much on the top of the frame. I think that you could stand to be rid of a bit on the bottom of the frame as I don't think that that adds anything.
Turkey shots are, well, just that...turkeys. Bad light, bad color, too busy background relative to the subject.
Waterfalls are OK. But, because they have been done SOOOOO often it really takes something for them to be outstanding. For example, the second one here (http://photography-on-the.net/forum/showthread.php?t=46495) is amazing. If I were to do your first one over, I would shorten the shutter time, the water is too blury, almost plasitic looking.

if you leave shutter open for a bit longer, waterfall would look much more silky and smoother, second waterfall could be framed tighter.
4th one is excellent shot, did you use flash?
You need to choose a better vantage point when shoot birds, in most cases, you look straightahead or looking up, get yourself real low next time and you'll see the difference

Thanks for the critiques. :)
sGu, Yes I used flash on the turtle. The Turkey shots were just taken quickly from my back door as they passed through, so I wasn't able to get to a better position for the shots without scaring them away.
