I want to get a couple of UV filters for my new lenses.

What I am unclear about is what the difference is in the coatings on these UV filters?

Take Hoya for example, they sell the following:

1. Standard Coating
2. HMC Coating
3. Super HMC Coating
4. Super PRO1 HMC Coating

What are the differences in real world usuage, besides the huge price differences?

You get what you pay for. I think there's a big difference between Standard and HMC, and not so much between the next two steps.

In the "real world" you'll just have to keep a better eye on things like shooting into the sun and dirt and excessive glare. You'll have to do this no matter which coating you have, really, but the better ones will reduce the flare or reflections in a non-perfect shot. I personally wouldn't get the Standard, but I'd get one of the others based on how much cash I could afford.

However, note that I say that and I am *not* a believer in UV filters. I've got a 77mm Super Pro1 that's never been out of the box. Someday, maybe... But also note that I am a *very* strong believer in glass coatings.

I wasn't a believer in UV filters either until my brother threw a penny at my lens 20mph and then to try to fix the "scratch" he wiped it with his thumb (please not my brother is older than me).
Ever since then I am a strong believer in filters/hoods/any protective measures.

I'd go with the multi-coated filters... I think it's worth the extra $10 or whatever the price difference is.
