What are the most important features or qualities I should look for in a flash bracket for wedding photography?

That would depend entirely on your budget and needs.

Moderate separation between the lens axis and the flash. Nothing magic here. The challenge is making sure the bracket will accommodate your camera. If you're using a pro level 1D system, you need a bigger bracket. I use the stroboframe but you need to use the biggest one possible - and even then it barely fits.

It needs to keep the flash centered above the lens axis, regardless of the orientation of the camera (landscape vs. portrait), in order to avoid the horrid 'side shadow'
