What does everyone think about the over use of acronyms like DoF, IQ, SooC, OOF, USM etc etc??
Are we becoming lazy typers?? Are acronyms confusing for newbies??

They've always been used and it's impossible to stop people using them. I use them sometimes and there's even an acronym thread somewhere. What's SooC mean though?

SooC would probably mean Straight Out Of Camera

Most are fine. A lot of these phrases get used constantly on a forum like POTN and it takes a newbie very little time to get the basics. I'm fine with OOF, DOF, AOV, FOV, USM, IS, and even SS for shutter speed so long as the context makes that clear.
We're not all writing the great american novel here, so abbreviations and acronyms are good.

Might want to throw PP, post processing and PS, photoshop on the short list as well.

USM can be a problem, but you can usually tell from the context as to if it is Ultra Sonic Motor or Unsharp Mask.
Actually we have standardised acronyms names at work:
There is a standard TLA - Three letter acronym such as USM.
Then there are ETLAs which is extended three letter acronym, i.e. longer than three letters such as POTN
And lastly there are STLAs which are short three letter acronyms i.e. shorter than 3 letters :D

I'm fine with them, it's usually rather obvious what people are talking about even when you don't know every acronym — and if you can't figure it out most people are nice enough to explain it if you ask them.
As stated above, there is a sticky in this forum about it and I think most people would find that post if they were looking. People won't stop using acronyms, it just won't happen, so I guess it's best to just let it exist and be nice to new people and tell them what it's all about.

I don't mind people using them as long as they don't go OTT. ;)

This is nothin' compared to what happens at work (medical... ;)) - conversations can often go like this:
the RMO ordered a stat ECG, FBC and BP when the CAGS with MRSA, COPD, LBKA and BPH went into AF from SR... etc.. ;)

... ETLA... STLA...
the last two would mean they don't fall under the definition of TLA since they aren't three-lettered?

Sometimes they are annoying. Just forces me to have to spend more time reading a thread that I would normally be able to digest in a few minutes.
