i think almost any of canon's digital SLRs would do that job well.
300D, 10D, 20D, 1D, 1D MkII, 1Ds, 1Ds Mk II -- any one of them can make a lovely 12x12 inch print.
now, if you are looking to make lovely 36x36 inch prints on par with medium format, then the 1Ds Mk II is the choice.

Given the resolution, either camera will work just fine. The 1DsMkII will just work better :)
1DsMkII (4992 x 3328 pixels)
at 240 Dpi (the normal resolution for best prints) you can produce a 13.7"x20.8" picture so plenty of room for cropping
at 300 dpi (a bit more then you need, but some people like (like me)
you can produce a native 11x16.6" print, so you will need to scale up a bit at this dpi.
1Ds (4064 x 2704 pixels)
at 240 dpi you get an 11x16" print
at 300 dpi you get an 9x13" print
Note that with my older 10D (at 6.3MP or 3072x2048 pixels)
I can produce a 8x12 native at 240dpi or by upscaling 2 for 1 I can produce a perfectly acceptable 16x24" print. So even a 10D is capable of producing a 12x12" print.
You are in the digital realm now and a single upscaling will typically not produce any noticeable artifacts in the final print. upscalling more then that depends on the subject matter, but I have seen up to a 8 for 1 upscale with no noticeable artifacts.
If you can afford it, go for the 1DsMkII (if you can find one) having the biggest sensor it will give you the most flexability if you need it.
Just my opinion,

probably a witty remark about neither of them taking pictures in a 1:1 aspect ratio... but you probably already knew that you would have to crop to get the desired result.

Both will do the job perfectly.
The primary difference between the two is speed, and of course the extra MP.
