If I open an un-processed jpeg in PSCS & click on 'print size' it shows a larger image then when doing the same on a converted Raw image - any idea's why?

They probably just have different "resolution" settings.
The print size doesnt mean anything, it's the pixel dimensions at the top that matter.
If you uncheck the "resample image" box, and enter the same resolution for both, you will find the print size to be the same.

As drisley stated, DPI is the problem. Most RAW converters default to 240 to 300 DPI when converting images where as the camera may save the JPG at 180 DPI. So the same 3500 x 2300 image at 300 DPI is = 11.7" x 7.7" and at 180 DPI it is 19.4" x 12.8". Think of the DPI as an instruction to the printer telling it how many dots to print per inch thereby affecting print size.
