I would like to create an overall Blur effect in one of my shots using PS.

I can do this ok but would like to go back into the shot once the blur has been applied and bring back some of the shot without blur, just in some of the areas. What would be the best way to do this.

Simple. Once you get the image blurred, then overlay that layer with another layer that is the original unblurred image, except cut out the parts that you don't need.

Or do the blur on the whole image, and use the History Brush to selectively undo the blur from desired areas.

Or you could use a layer mask with two layers to selectively bring back certain details.

Or my favorite variation is to start by copying the layer (Layer - Duplicate Layer - OK) then blur the top layer. Once that is done, go over the areas of interest with an eraser brush, about 20% opacity, 0% hardness.
