Most people don't seem to be aware that Lightroom has a very readable User Guide that you can download here: http://livedocs.adobe.com/en_US/Lightroom/1.0/help.pdf
In my opinion that's all you need; I spent a few dollars to get mine printed and bound at Kinko's and after reading through it twice I was pretty well set.
Unfortunately most books were written prior to Lightroom 1.1 which was a major revision over the original Lightroom 1. As a result, the two most popular books, one by Kelby and the other by Martin Evening, have extensive revisions contained in PDF files that have to be downloaded from their publishers' websites. I'd like to think that if I'm going to buy a book I want it to contain current information; and not have to flip between the printed book, and the addendum - both of which have confusing numbering schemes.
The best two books that were written AFTER the release of Lightroom 1.1 are Adobe Photoshop Lightroom 1.1 for the Professional Photographer by David Huss and David Plotkin; and Lightroom Adventure by Mikkel Aaland. The rest I've seen are simply rehashes of the excellent User Guide.
If video is more in keeping with your learning style, the DVD tutorial by Colin Smith is excellent. You can find it here: http://www.photoshopcafe.com/video/products/12Lightroom.htm
Jeff Schewe and Michael Reichmann also have a DVD tutorial but it suffers from the fact that it is based on version 1, with another portion appended after version 1.1 was released: http://www.luminous-landscape.com/videos/LR-V1.shtml
Anyway, I still think that the free User manual has everything you need except pretty pictures :) Personally I wouldn't spend any money on a book now with the imminent release of Lightroom 2.0.

I like the Photoshop Lightroom Adventure book by Mikkel Aaland. He took a group of pro photographers on a trip to Iceland, and the book is filled with pictures from there, all processed through Lightroom... many even list the acutal settings used in LR by the photographers. Came out after 1.1 also.
He already took a group to Tazmania for the 2.0 book, which I look forward to.
