What's the difference between the model numbers ending in "0" vs. "1" other than the latter being the replacement?

It all depends on the Gitzo series. According to naturescapes.net the changes are:
The Series 1 and Series 2 tripods now have a new leg setting for a lower shooting angle similar to the Series 3 tripods.
The Series 2 tripods now have an upper magnesium casting for extra strength and lighter weight, and a gasket to secure the tripod feet.
The Series 3 and Series 5 tripods now have the "Safe Lock" plate (Series 1 and 2 got the plate last year) with a set screw for additional head security and a gasket to secure the tripod feet.Note: the Safe Lock plate will be available separately for all models later this summer for an estimated $30 if you wish to upgrade.

From what I've been able to gather so far for the 2 series, the 2531/41 are only 0.1 lb lighter than their predecessors . The biggest difference appears to be the minimum height - from 11 to 6.7 inches for both. Load capacity remains the same for both as well.
