Photoshop effects

I'm fairly new to Photoshop 7, can anyone give me any advice on how to create modern saturated effects, in particular i'm looking at creatng photos of my children (dressed in denim/white) against white backdrops with say colour balloons.

So I take it you want to do some selective desaturation? Or do you want to just make the colors lighter and dreamy looking?
