Two ways to do it
- Infared filters which mount on lens
- Infared slide which replaces the one over the existing sensor making it a permanent thing. Most people do this on older cheaper cameras like 350D's.

do i have to adjust WB or change things to black & white, or will the camera figure out what im doing and react accordingly?

make a custom wb by taking a pic w/ the ir filter on and set that as the wb. you can also try it w all the other wb preset on the camera. im a nikon guy so idk what wb presets the canons have

Attach the IR filter to your lens and take a picture of a very green subject (patch of your lawn, etc)...make sure that it is nice and green (no brown patches). Then, set a custom white balance with this picture as the source, and you're set to go.
