Is there an adapter that will allow a Canon EOS RS-60E3 to be used for cameras requiring a Canon RS-80N3 ?

Just that as well as a standard release cable I have, I have some timing gear with a RS-60E3 end on it, and it will save me buying another 2 sets of cabling/release.

I think the easiest route might be to get the POTN Release Cable N3 (http://www.procameragear.com/catalog/product_info.php/cPath/30/products_id/157). IIRC the E3 connector's a regular 1/8" stereo plug, and the POTN release is made to extend with one. Worst case, couple the N3 end to your existing cables with a 3/32" - 1/8" stereo adapter from Radio Shack. Canon made (makes?) an E3-T3 adapter and a T3-N3 adapter, but not an E3-N3 AFAIK.
