first photoshop question

I just got photoshop elements 3.0. I just finished organized my collection of photos. So far I love photoshop. However, I have a couple questions. Can I expand the picuture to 100%? I tried to do this in the VIEW AND ORGAMIZE PHOTOS and QUICKLY FIX PHOTOS menus to no avail. Also, do you use the QUICKLY FIX PHOTOS or the EDIT OR ENHANCE PHOTOS menu to do most of your editing?

In proper photoshop you use control and + or - to make the pic bigger or smaller. Can't help with your other questions, I don't have elements installed.
