i am doing a shoot soon of a couple of orchard owners in their orchards, i have one flash, the 580 I, and i have access to an older flash which is powerful as well, would it be a big benefit to use both? the idea of the shoot is to get the owners in the orchards doing some hands on work, or seeming to do so. i plan on using a few props such as pruning sheers, and a bucket of cherries, if that helps set the senerio up any... the example i was given shows a guy in focus with the orchard extremely out of focus.

More is better, sort of, I guess. If it were me, Seeing as you will shooting outdoors I'd probably only use the 580 set at -1 or so,as a fill light. I like to keep things simple, less chance to have a run in with Murphy,s Law!

What time of the day is the shoot taking place - and what will the weather conditions be like?

Try and not shoot in the mid-day sun. Can't see the need for anything more than a little on-camera fill flash.

[Edit: what makes you believe you may need two flash heads?]
