It's got a pretty unique sound even to this day and when she rang it my grandfather and the rest of the cowboys would come running. There was never enough food because these guys were always so hungry (very hard life and hard work) and the cowboy at the end of the line would get shortchanged, so to speak. So they would race in, get their grub, find a place at the table, spit on their food, and THEN go wash up. By spitting on it, they ensured that nobody else would steal it while they were washing.


Those cowboys, tough as they were, wouldn't touch food that another man had spit on.
