I am not a pro by any means, but I think (atleast for the posed shots) it's all about the angle.... Don't have her lean on her arm (you'll get the turkey leg look), try not to get too many side shots... shooting from above her can make her look smaller, and try to get more shots of her holding the bouquet close to her chest and shoot straight on (this bends her arms, so that they are more hidden and also the flowers tend to hide them too.)
This is a previous thread that is very helpful:

Don't forget chinups! They're very effective for firming up the arms too!

its tricky to with some people who have lost a lot of weight (not all of it, but lots) because they sometime still have those really loose flabby arms. agh. its tricky. id love to minimize them in their wedding photots, but it is really hard, arms are pretty obvious!!!

I always bring a step ladder; especially with plus size brides. Shooting from above makes everything look slimmer and it really helps reduce any extra chins. :)

I actually use it for pretty much all of my family/group shots. Trust me; the chubby Grandma's, Mom's, & Aunts will love it. :)

I get real use to going up & down; it's only a few steps but gives me a nice angle and the photos don't look like you're looking down on everyone. Definitely helps to have an assistant though.

You have to just do your best to pose them and shoot them from flattering angles. If they are wearing an outfit that is not the most flattering in the world, that isn't YOUR problem.. Just do your best. Don't shoot them from straight at the side, obviously, try and shoot from above, make sure they roll their shoulders back and stand up straight and relaxed, don't let them squeeze their arms down at their sides.. :)
