I know both have their advantages but rubber fold down out of the way, or the plastic dos't fold down  Did you understand that?

What's the question exactly ?
The rubber ones do fold - good for compactness and bad for lens physical protection. Plastic ones take more room in your bag, but are much more robust in terms of protection.

Which one do you use?

Rubber ones also wear out, cracking along the "fold", and need to be replaced occasionally. I use plastic ones, because my L lenses all came with them.

My Tamron 28-75 and Tokina 17mm ATX-Pro came with the original plastic hoods.
My Canon 70-200 f/2.8L (which I bought second-hand) also came with the original plastic hood.
My Canon 50mm f/1.8 MkII also has a plastic hood. It's a long story, but in short - the lens was bought for me by somebody in exchange for some images for his book (he wanted to pay money, but I asked for a lens with a hood instead ;) ).
Only my Canon 100mm f/2.8 Macro lens is fitted with the rubber hood - after I saw the price of the original plastic hood (almost $40 !), there was no way I was going to pay that kind of money for a piece of plastic ! So in the end I got the Adorama rubber hood for less than $5.

all of my hoods flip backwards on the lense. almost no room taken. This is a definite advantage for conserving space, but they will also fold back quite easily in the event you might drop your camera ( ), negating most of the protective "Bumper" effect of the oem hood.
I like the plastic/carbon fiber hoods for durability AND protection. ;)

Any hood that I have to buy "aftermarket" will be one of the cheapie rubber hoods at least for "standard" primes/zooms, they're great for when you want to take a shot of something through some glass (especially at angles) and don't want to lose light from a polarizer. For telephoto lenses I haven't bought a lens that didn't come with a pretty good hood already.
