Ignore the over saturation, I will be fixing that.

I am looking to REMOVE the cars and parking lot seen through the rear window of the car...and fill it with???

Any ideas?

I have absolutely no clue where to start...

I'd just blur it. Anything you put in there is only going to distract from the subject anyway, so it would need to be a hint of something, rather than anything in particular.

I agree. I would just select that area apply a lens blur.
