Martin Evening "Photoshop CS3 for photographers".
Deke McClelland "Photoshop CS3 One-on-one". Best book for complete Photoshop newbies. Kind of roundtrip through the features.
There's also "Real World Photoshop CS3", but not as first book.
And then there is "Professional Photoshop" by Dan Margulis, but that's on my shopping list at the moment, and definitely not a first book on PS.

I need a good photoshop book that is easy to understand.
Be wary of the easy to understand thing. That means things get dumbed down.
Get a good book, and bite the bullet.
Against the metallic taste in your mouth I recommend eating cherries or strawberries during lecture.
