What is the difference in terms of the lighting that comes out of these two different box's, and when would you use either one.. ex: softbox for lighting a person, vs octabox when lighting what? a person but in a different kind of setting, etc...
just curious as to how the light is produced differently

IMHO there isn't much difference to tell you the truth in terms of the lighting you get, unless is an Elinchrom deep throat octa, i haven't seen a real difference between them. If at all one catchlight will be rectangular the other will be almost circular, some prefer rectangular, some prefer circular and a few edit it out.

A rectangular softbox could also give you more controlled light for full body shots.
