Wedding Reception Question

I'm trying to incorporate other means of shooting wedding receptions, (regarding flash) and besides having the flash on camera what do most of you do? Do you use two flashes, lights, and/or do you use a bracket (off camera) As, I mentioned, I use this method (on camera) a lot an always bounce the light of the ceiling.

I have 2-3 flashes located around the room, often just two lighting the head table from each side, sometimes bounced, sometimes direct, depending on the ceiling type. I use radio slaves to trigger them, and have a speedlite for fill on my camera as well (often turned off). This lets me shoot any aperture I want, before I did this I was often at ISO3200 F2.8 1/30th and the shots just weren't sharp enough for me.

I used to use Alien Bees but they're too big and intrusive, and you don't need that much power.
