Ok,
I am a wildlife photographer and you can see my gear.
I am ready to move up but can’t decide what to do.
Here are the options,
Canon 50D w/16-35 and the Canon 5D (old version but a new one)
Or
Canon 1D mark III w/16-35
Or
Canon 500mm
What do you think? Is it a good lens choice?

You'll want the FOV of a crop camera. I'd say 50D + 500mm, or even just the 50D. No need for the 16-35, or the 5D.

I am certainly no wildlife photographer but wouldn't you be better with just ultra-telephoto lens and not UWA lens?

IF you want to pose a brown bear right in front of you, ya sure go for the 16-35mm :) I would without a doubt get the 500mm F4. I have taking many great shots with an Xti, and having that monster prime would have only aided more, but don't forget you are going to have to invest in a good support system for that lens IMO.

Well then choose the second option for the 50D has 1.6x crop factor while I believe the IDmk3 has a 1.3x crop factor. The 1Dmk3 will allow for a wider view.

50D would be better than XTi, so would a XSi. Work your way up to the long lenses like most people do. In the 500+ range: I started with an FD 500/4.5 and adapters, then an EF 500/4.5, then finally an EF 500/4. Am always on the lookout for a used Sigma 500/4.5.
