Most times I use spot metering for my critter shots (caring more about my subject than the BG).
But in the snow I want the snow to look like snow. What metering mode would be more appropriate?

It's not really the metering mode you need to be concerned about - snow throws off the metering system.
If you want the critter exposed properly, expose for it as you normally do. If you want the snow to look like white snow (instead of gray stuff), overexpose by 1-2 stops. If the critter is relatively small in composition compared to the snow, you can use evaluative with +2 exposure compensation with fairly decent results.

Exposing for the blue sky would also help.
