I know you can get the adapter and everything, but I thought I read somewhere that you could set the aperture and just take the lens off and put a Nikon one in front and shoot it.
Am I crazy or is there actually a way?

As far as I know you could only use a lens that allows you to set the aperture manually (on the lens) unless you want to shoot wide open all the time.

You mean mount a Canon lens, set the aperture to f/5.6, take lens off, mount a Nikon lens, and the camera will then stop down that Nikon lens to f/5.6 for the shot? Absolutely and utterly impossible......

If it's a manual Nikon lens, then you could do that, but you'd have to tape the lens/camera area to avoid light leaks. The Nikkor will nest inside the Canon opening, BUT it might interfere with the mirror, so I don't recommend doing that.
Better to get an adapter. I have one & it works great.

Better to get an adapter. I have one & it works great.I want to get an adapter to use my old manual Nikkor lenses on my 20D.
In doing a little on-line shopping, I see a HUGE difference in prices, though. What I've seen ranges from about $50 (an Adorama brand unit) to $270+ (a Novoflex unit). Do you have any idea what the difference(s) is/are between these? Do you have any specific recommendations?

I got mine here. (http://www.cameraquest.com/adaptnew.htm) It's metal, a very snug fit, & allows focus to infinity.
