It seems to be easy when the person face you straight, the distance from both eyes to your lens is also equal. You can shoot f/2 and f/2.8 with ease. However, if the person look back at you (or look at you at an angle) which create different distance from each eyes to your lens, to achieve a thin DOF, what f stop shall I use?

go to about f4... what lens are you shooting with?

85mm f/1.8, or 24-70mm f/2.8

Depends on your distance from the subject too.
I typically shoot 70-90mm at a distance of 6-8' with f4 to f9
Best way to find out what works for you and your image, is keep testing!
Does your camera have a depth of field preview button?
